Our Story

We didn't open a bakery. We opened a piece of home.

La Panaderia Michaocana was born from a simple conviction: that the bread you eat should taste like it was made by someone who cares. Our recipes travel from Michoacán to Fort Payne, unchanged and unapologetically traditional.

Every morning, our ovens fire before sunrise. We mix, fold, shape, and bake by hand — no industrial shortcuts, no mass-produced compromises. The result is pan dulce with a crust that cracks and a crumb that stays soft for days, café de olla spiced the way it should be, and tamales wrapped in banana leaves with the same care our grandmothers taught us.

Pan Dulce

Conchas, cuernos, orejas, cuquíes — each one shaped by hand and baked to a golden finish. We make over a dozen varieties, rotating with the seasons.

Our coffee is brewed the old way — piloncillo, cinnamon, and a pinch of anise in a clay pot. It's warm, it's sweet, and it's the reason people come back at 6 a.m.

Tamales & Mole

Wrapped in banana leaves and steamed slow, our tamales are a weekend ritual. We also prepare mole negro and rojo on special order — ask us how.
